Celebrity chef Colin Fassnidge visited the CYCA to try the Cafe 44 dish which is in the running for the 2021 Perfect Plate Awards.
Fassnidge, a former judge on Channel 7’s My Kitchen Rules, is an ambassador for the Clubs NSW competition, alongside Manu Feildel.
The Irishman was treated to Cafe 44’s crispy skinned Tasmanian salmon – created by Head Chef Magnus Jonsson and cooked by Jesper Hansen.
The salmon is served with a green pea and wasabi puree, roasted pumpkin, yuzu cream and pickled radish.
As many Members and guests at CYCA have done since the dish was introduced, Fassnidge polished the plate clean and congratulated the Blond Catering team on their creation.
You can help Blond take home a trophy by tasting the dish and voting online between before 11:59pm on Monday 21 June.

- Give a score between 1 and 5, including a photo of your receipt as proof of purchase
