Vote for Cafe 44 dish in Perfect Plate Awards

The tasty crispy skinned Tasmanian salmon at Cafe 44 is in the running for the 2021 Perfect Plate Awards.

A popular feature on the Autumn/Winter menu, the salmon is served with a green pea and wasabi puree, roasted pumpkin, yuzu cream and pickled radish.

You can help Blond Catering take home a trophy by tasting the dish and voting online between Thursday 29 April and 11:59pm on Monday 21 June.

Here’s how it works:

  • Visit Cafe 44 and purchase the crispy skinned Tasmanian salmon
  • Scan the unique QR code on display
  • Give a score between 1 and 5, including a photo of your receipt as proof of purchase

Head Chef, Magnus Jonsson, has provided insight into the inspiration behind this vibrant dish.

“It is a play on the traditionally Scandinavian combination of horseradish and salmon, which pair together very well,” Magnus said.

“Normally we would serve it with some type of potato dish, but as a lot of customers nowadays are trying to cut down on their carbohydrate intake, I like to offer some dishes that accommodate for that.

“Since pumpkins are in season, I decided to use small Japanese pumpkin for the dish instead. To make the dish visually pop, I also added green peas as the second vegetable.

“To incorporate the horseradish, I replaced the horseradish with wasabi, which is in the same vegetable family and very similar in taste.

“That then turned into the green pea and wasabi puree. To continue the Japanese theme, instead of using white wine to give acidity to the accompanying sauce, I used juice from the Japanese citrus fruit yuzu.

“Going back to the Scandinavian flavours, but also something that is often used in Japanese cooking, I added a pickled vegetable. In this case, white radish/daikon.”
