Recipe inspiration – Leche Frita

Leche frita (translates to fried milk) is a Spanish sweet typical of northern Spain. It is made by cooking flour with milk and sugar until it thickens to a firm dough which is then portioned, fried and served with cinnamon sugar.

Serves five

Ingredients

  • 400ml Milk
  • Rind of 1 lemon
  • 2 Cinnamon sticks
  • 65g Caster sugar
  • 40g Cornflour
  • 50g Plain Flour
  • 3 Egg yolks

Method

  1. Put milk, lemon rind, cinnamon and sugar in a pan and bring to the boil. Take off heat, cover and let infuse for 20 min.
  2. Put cornflour and flour in a bowl and beat in the egg yolks. Add a little bit of the milk and whisk until it forms a smooth batter.
  3. Strain milk then put back on the heat. Pour in the egg mix while constantly stirring. Continue stirring over low heat until it thickens. Bring to the boil and cook for a few minutes, beating it hard to make sure it becomes a really smooth consistency and comes away from the sides.
  4. Pour into a tray, 2 cm thick. Chill until firm.
  5. When set, turn out and cut into squares. 2 per person. Whisk eggs, then dip the squares into the flour and then the eggs. Lift out and cover with the bread crumbs, making sure they are completely sealed.
  6. Fry in hot oil until golden, drain on paper towel and dust with cinnamon sugar
  7. Serve immediately with berry compote & ice cream
